Grain Bill:

20# Durist wheat
10# DWC pale
2# rice hulls

Hop Bill:

1 oz N. Brewer 6.9% 60 min
1 oz Tet 5.1% 30 min

Mash Schedule:

1st rest...7.5 gal water @ 108f for 20 min
2d rest...122f for 20 min
3rd rest 151f for 60 min
4th rest...168f for 10 min

Brewers Notes:

attempted to ferment @ the lower end to bring out more spice rather than phenols, 64f was a bit to cool, for more spice I'd recommend trying 66f
