Since there's already a few HefeWeizen recipies here, I thought
I'd add my own. The thing I like about this recipe is that it's
extremely simple, and the Wyeast 3068 has never let me down!!

Ending Gravity : 1.015
Alcohol content : 5.9%
Recipe Makes : 5.0 gallons
Total Grain : 11.00 lbs.
Color (srm) : 5.6
Efficiency : 75%
Hop IBUs : 22.7

Malts/Sugars:
5.00 lb. Pilsner 2-row
0.50 lb. Crystal 20L
5.50 lb. Wheat

Hops:
1.00 oz. Liberty 4.5% 60 min
0.50 oz. Liberty 4.5% 10 min
0.50 oz. Liberty 4.5% 1 min

Boil temperature of water: 212F
Grain Starting Temperature: 70F
Desired Grain/Water Ratio: 1.33 quarts/pound
Strike Water: 3.66 gallons of water at 167F
First Mash Temperature: 152F

Water Absorbed by Grain: 1.10 gal
Water Evaporated during boil: 1.00 gal
Wort Left in Brewpot: 0.33 gal
Add 3.77 gal of water to yield 5.0 gal of wort

Notes:
Mash for 90 minutes due to wheat.

Use Wyeast Westestaphen.
