This all-grain beer has won two blue ribbons, one at the Emerald Coast Brewfest in 1994 and one at the TRUB VII Open.

All-grain
Malt
3 lb 2-row pale
3 lb wheat malt
1/2 lb capapils
1/2 lb aromatic malt
2 1/2 clover honey
Hops
1/2 oz Northern Brewer (7.5 alpha)
1 oz Fuggles (4 alpha)
Yeast
Yeast Lab Canadian Ale
Two-step infusion mash with a 30 minute rest at 130 and saccharification at 152.
Sparge to collect 6.5 gallons. Bring to boil and add honey.
N. Brewer added at 60 minutes and 1/2 oz Fuggles added at 15 minutes and 1/2 oz at knock-out.
Chill and pitch yeast starter.
Ferment at 68 degrees.
