Total Grains: 9.75 ponds
Color: 4-5
Extract Efficiency: 75 %
Hop IBU's: 24
Boiling Time: 90 minutes
Primary Fermentation: 5 days glass @ 65
Secondary Fermentation: 5 days glass @ 55

Grain Bill:

5.0 us white wheat malt
4.0 us pale
0.5 us 6-row
.25 cara-pils

Hop Bill:

1.0 oz. mt. hood 4.3 aa% @ 90
1.0 oz. mt hood 4.3 aa% @ 30
- irish moss @ 20
1.0 oz. perle @ 7.2 aa% @ 3

Mash Schedule:

step mash
mash @ 135 for 30 minutes raise temperature via heat and adding measured amont of 200 degree water to 156 and hold for 40 minutes.
raise to 168 and hold for 5 minutes and mash out - boil for 90 minutes.

Brewers Notes:

Made for halloween - this beer came out crystal clear after two plus weeks in the fridge - great aroma from the perle and well balanced - for those of you that have had a pyramid wheaten ale this is on the same mark - good with or without lemon.
