EXTRACT RECIPE:
Ingredients:
6.6 lbs Light extract
1 lb x-light dry malt extract
2 oz. Cascade hops (Boiling)
1/2 oz Saaz hops (Finishing)
3/4 lb Honey
1/2 lb 30L crystal malt (grain)
1/8 lb black patent (grain)
1 grated ginger root
1/2 tsp. nutmeg
6 tsp. cinnamon chunks (3 tsp. ground for substitute)
4 whole cloves
1 tsp. gypsum
Yeast Labs A09 English Ale Yeast (Liquid starter vol. 2 cups)
Process: Bring all grains up to near boil in 1 1/2 g. water in
a grain bag. Remove. Add honey, malt extract and boiling
hops. Boil for 1 hour.
--After 45 min. add all spices. (To a grain bag preferably)
--After 58 min. add Saaz Hops
Rack to secondary and bottle after approximately 3 weeks from brew
date. Enjoy! This beer is a banquet of taste and a great Xmas brew!
