Brewing Method: Partial Mash
Yeast: california lager wyeast
Yeast Starter: 1/2 cup extract 1 pint H2O
Batch Size: 5 gal
Original Gravity: 1.045
Final Gravity: 1.008

Boiling Time: 40 min
Primary Fermentation: 3 days@68'
Secondary Fermentation: 14 days @68'
Additional Fermentation: 4 weeks in the bottle@72'

Grain Bill:

3.3 lbs Northwestern Gold liquid extract
1 cup crystal (aprox 60 lvb)crushed
1/4 cup chocolate malt crushed
2 cups dextrose
1 cup honey

Hop Bill:

1/2 oz cascade leaf @40 min
1 oz ultra pellets @10min
1 tbs gypsum
2 tsp irish moss

Mash Schedule:

In a grain bag put crystal and chocolate. add gypsum and grains in 1 1/2 gal H2O. Bring up to 150'F and hold for 30 min. discard grains and put in malt extract, dextrose and honey. Bring to boil. add hops per schedule with addition of Irish moss at 15min. cool to below 90'F and add yeast.

Brewers Notes:

Batch prime using 1 1/4 cups dextrose boiled in 2 cups H2O. Bottle as usual.
