Yeast: American Ale Yeast
Yeast Starter: 1/3 cup DME 2 pints H2O
Batch Size: 5 gallons
Original Gravity: 1.034
Final Gravity: 1.012

Boiling Time: 120 minutes
Primary Fermentation: 4 days
Secondary Fermentation: 2 weeks
Additional Fermentation:

Grain Bill:

1/2 lbs. 40L Crystal Malt
1/2 lbs. Crushed Wheat
1/2 lbs. Otter Paris
6 lbs Light Malt Extract
2 lbs Honey
6 oz. grated ginger

Hop Bill:

1 oz. Cluster hops (boiling)
1 oz. Cascade hops (finishing)

Mash Schedule:

Add specialty grains to three gallons water at 170 degrees. Let steep 20 minutes. Bring to a boil. Add extracts, honey, and ginger. Biol 60 min. Add Cluster hops to boil for 60 min. Then add cascade with five minutes left.
