Brewing Method: Still Cyser
Yeast: Red Star Sherry Yeast
Yeast Starter: Nope, that's right, I underpitch!
Batch Size: 5 gal
Original Gravity: 1.110
Final Gravity: 1.006
Alcohol Content: 14 %
Pasteurization Time: 20m
Pasteurization Temp: 200F
Total Amount of Honey: 14 lb
Color: ?
Yeast Nutrient-Amount: 2 tsp yeast nutrient (fermax?)
Yeast Energizer-Amount:
Primary Fermentation: 2 weeks @ 68F
Secondary Fermentation: 3 months @ 65F
Additional Fermentation:

Honey Bill:

14lb Clover Honey

Other Flavorings or Fermentables:

We used 5 gals of Wal-mart bought Apple Juice. We made sure it was 100% apples and no additives (rather hard to find in Wal-mart). When I do it again, I will spring for it and use preservative-free apple cider.
Also, added 2 oz. of cinnamon and 5 cloves (imperceptible, double if you want to taste them).

Brewers Notes:

Great as an after dinner drink. Allow to age for at least six months unless you like drinking gasoline.
