Yeast: Premiere Cuvee Champagne Dry YEast *REDSTAR*
Yeast Starter: 5 grams (1 Packet)
Batch Size: 5 US Gallons
Original Gravity: N/A
Final Gravity: 1.020
Alcohol Content: N/A %
Pasteurization Time: See below (combined 15 mins)
Pasteurization Temp:
Total Amount of Honey: 8 Pounds

Yeast Nutrient-Amount: 3 teaspoon
Yeast Energizer-Amount: N/A
Primary Fermentation: 1 Month @ 72-74'F
Secondary Fermentation: 1 Month @ 72-74'F

Cotton Flower Honey (S-Texas) from LLano

Other Flavorings or Fermentables:

1 juice of a fresh Lime

Brewers Notes:

Mixed Honey and huice of 1 lime in 1.5 Gallons of water
Boiled for 10 Minutes, skimming during boil
Let cool
Refrigerate in glass bottles overnight
Re-heat and bring to boil for 5 minutes, Skim top
pour into 3.5 gallons of spring water
Let Cool
ferment for 21 days in carboy (5 gals)
Rake to half gallons
Ferment for 1 month
raked to 1 liter bottles
Was delicious after 2 months in bottles, ages beautifully!
