Brewing Method: Still Traditional Mead
Yeast: Premiere Cuvee Active Dry Wine Yeast *REDSTAR*
Yeast Starter: 5 grams (1 Packet)
Batch Size: 5 US Gallons
Original Gravity: 1.082
Final Gravity: TBA
Alcohol Content: TBA %
Pasteurization Time: Bring to a Boil, and boil 15 mins
Pasteurization Temp:
Total Amount of Honey: 12 pounds Wild Flower (N-Tx)
Color:
Yeast Nutrient-Amount: None
Yeast Energizer-Amount: 3 Teaspoons
Primary Fermentation: 30 days @ 72-74'F in 5 Gallons Carboy
Secondary Fermentation: 30 days @ 72-74'F in 1 gallons glass jugs
Additional Fermentation: 4 months (MIN) in 1 Liter Bottles (ez-caps)

Honey Bill:

12 pounds of RAW wild flower honey

Other Flavorings or Fermentables:

Juice of 1 Lemon or 3 mexican Lemons

Brewers Notes:

Mixe Honey and juice of 1 lime in 1.5 Gallons of water
Bring to a high boil,
Boil for 15 Minutes, skimming during boil
Let cool
pour into 3.5 gallons of spring water
rake on second fermentation and before bottling.
Very drinkable in 3 months, best taste after 6 month or later.
