Grain Bill:
8 lbs pilsner-DWC
1 lb dextrine-DWC
4 ozs aromatic-DWC
4 ozs 20L crystal-Durst
Hop Bill:
1.5 ozs Saaz at 3.5% alpha for 60 (pellets)
1 oz of same for 30
1 oz of Saaz at 3.0% alpha for 15 (whole)
1 oz of same at finish
Mash Schedule:
I used a relatively loose mash of 2qts/lb due to the triple decoction mash.
-added water to stabilize mash at 95 for 10 mins
-removed 1/3 of thick mash, raise to 152 for conversion, then boiled 15 mins
-added decoct to main mash and stabilize at 122 for 10, then boosted to 135 by direct heating
-removed 1/3 of thick mash, raise to 152 for conversion, boiled 15 mins
-added decoct to main mash, stabilized at 152 until conversion complete
-removed 1/3 of liquid, boiled 10 mins, added back to main mash and stabilize at 168 for mash out
For my water I used 3 gallons of tap and 7 gallons of distilled to give the following approximate figures:

Brewers Notes:
Primed with 1 cup light DME.
This was my first lager and I'm pretty pleased with the results. I enjoy the light trace of diacetyl from the Munich yeast and is appropriate for a PU clone. The water treatment makes a difference, the bitterness is very clean in this beer.
