Brewing Method: Extract
Yeast: Amsterdam dry lager
Yeast Starter: rehydrate in warm water
Batch Size: 5 US gallons
Original Gravity: 1.048

Boiling Time: 30 minutes
Primary Fermentation: 1 week at 60 degrees F
Secondary Fermentation: 3 weeks at refrigerator temperature
Additional Fermentation: Once bottled, Keep Cool!

Grain Bill:

6 lbs Laaglander extra-light dry extract
1 lb Pilsner Malt

Hop Bill:

1 ounce Perle hops (7% alpha acid) at beginning of boil
1/2 ounce Saaz hops for last ten minutes of boil
1/2 ounce Saaz hops at end of boil

Mash Schedule:

Mash lightly cracked Pilsner malt for 45 minutes in 1 quart of water (stabilize temp at 155 degrees F). Remove grains from water and rinse them in a kitchen strainer with a gallon of 170 degree water. Coolect all liquids in brew pot and top off to 2 gallons or so. Bring to boil, add extract and Perle hops. Boil for 20 minutes, add 1/2 oz Saaz hops and boil ten more minutes, remove from heat and add remaining hops.

Brewers Notes:

Once the beer is bottled (3/4 cup corn sugar), it should be kept at refrigerator temp if possible.
