Brewing Method: All Grain
Yeast: Wyeast 2112 Calafornia lager Retains Lager characteristics at temperatures up to 65F, and produces malty beers. Flocculation-high; apparent attenuation - 67-71%. (58-68F)
Yeast Starter: 2-1/2 gallon starters
Batch Size: 12 gallons
Original Gravity: 1.055
Final Gravity: 1.015
Alcohol Content: 5.5% %
Total Grains: 26#
Color: 17.4
Extract Efficiency: 65% %
Hop IBU's: 40.4
Boiling Time: 2 hours
Primary Fermentation: 21 days @ 60F
Secondary Fermentation: Currently lagering at 35F

2 oz N brewer plugs 8.5% First Wort
.5 oz N brewer plugs 8.5% 60 minutes

10 minutes @ 126F
20 minutes @ 140
60 minutes @ 156
30 minutes @ 158
15 minutes @ 165
