Yeast: wyeast 2206
Yeast Starter: built up slurr
Batch Size: 14 Gal
Original Gravity: 1080
Final Gravity: 1027
Alcohol Content: 8.0 %
Total Grains: 37 Lbs
Color: 29
Extract Efficiency: 85 %
Hop IBU's: 18
Boiling Time: 90 minutes
Primary Fermentation: 2 weeks @ 50f
Secondary Fermentation: 1 month @ 34f
Additional Fermentation: as long as you can wait @ 34f

Grain Bill:

20 lbs Pilsner 2-row (weryman)(MASH)
15 lbs Munich Light Malt (weryman)(MASH)
1.5 lbs Crystal 80L (MASH)
0.5 lbs Chocolate (MASH)

Hop Bill:

2 oz Hallertauer 5% BOIL 60 minutes
1 oz Hallertauer 5% BOIL 30 minutes

Mash Schedule:

122f for 20 min. for this 1st temp I use 1.5 QT water/Lb.
137f for 20 min.
154f for 60 min.
168f for 10 min.
