Yeast: wyeast 1318 & Wyeast 1084
Yeast Starter: 1 wine bottle for each slurr
Batch Size: 15 gal
Original Gravity: 1058
Final Gravity: 1024
Alcohol Content: 5.0 %
Total Grains: 37.5 lbs
Color: 143
Extract Efficiency: 85 %
Hop IBU's: 30
Boiling Time: 90 minutes
Primary Fermentation: 7 days @ 68f
Secondary Fermentation: 5 days @ 68f
Additional Fermentation:

Grain Bill:

24 lbs Pale Ale Malt (MASH)
1.5 lbs Cara-Pils Dextrine (MASH)
5 lbs Oats (MASH)
1 lbs Black Patent (MASH)
2 lbs Chocolate (MASH)
3 lbs Roast Barley (MASH)
1 lbs Crystal 80L (MASH)

Hop Bill:

3 oz Northern Brewer 6.9% BOIL 60 minutes
2 oz Fuggles 3.8% BOIL 30 minutes
1.5 oz Fuggles 3.8% FINISHING 3 minutes

Mash Schedule:

Add 9.38 gallons of water at 177 F to heat mash to 157 F for 60 minutes.

Add 2.84 gallons of boiling water to heat mash to 168 F for 10 minutes.

Brewers Notes:

Add 8oz Lactose to the beer at kegging time, add the lactose to boiling water to dissolve and pour into the keg as you rack the beer in.

This is a very sweet, full bodied stout, the 157f mash adds a fair amount of unfermentable sugars which make the beer very smooth and sweet. If you mash at a lower temp just compensate with more lactose.
