Brewing Method: Partial Mash
Yeast: White Labs Irish Ale Yeast
Yeast Starter:
Batch Size: 5 gal US
Original Gravity: 1.056
Final Gravity: 1.013
Alcohol Content: 5.6 %
Total Grains: 20 oz + extract
Color: 25.58
Extract Efficiency: %
Hop IBU's: 28.7
Boiling Time: 60 min
Primary Fermentation: 1 week
Secondary Fermentation: 3 weeks
Additional Fermentation: 2 weeks bottle

Grain Bill:

6 lbs amber malt extract
1 lb dry light malt extract
8 oz 40L. crystal malt
8 oz Belgian Chocolate malt
4 oz Black Patent malt
12 inches chinnamon sticks
2 oz fresh ginger root (peeled and sliced)
2 tsp whole allspice
1 tsp whole cloves


Hop Bill:

1 oz Bramling Cross (60 min)
0.5 oz Hallertau (30 min)
0.5 oz Hallertau (5 min)

Mash Schedule:

Partial mash.

Grains were steeped at 158 degrees F. for 45 minutes. They were then washed sparged with 170 degree F water until they drained fairly clear. Brewing continued as per normal with extract brewing.

Brewers Notes:

This is another in our long list of anime-themed beers.

The spiced porter was certainly spicy. The cinnamon and ginger were the stars in this one. After some aging, the ginger flavors melted away some and the cloves and allspice came though nicely. The hops seemed a bit light (no resin notes), but there was a bitter finish which probably came from the spices themselves. Ultimately, it was quite nice.
