All grain recipe for 5 gallons
6# 2 row malted barley
1/2# US Special Roast malted barley
1 oz. Black patent malt
4 oz. Chocolate malt
1.5 oz. Willamette whole hops (11.5 HBU) 90 minutes
1 oz. US Saaz hops 25 minutes
1 oz. Willamette hops 5 minutes
2T gypsum
Wyeast American Ale yeast
1 tsp Irish moss 15 minutes before end of boil.
Step infusion mash with the following rests:
20 minutes at 120 dF
20 minutes at 136 dF
20 minutes at 150 dF
45 minutes at 153 dF
Mash out at 166 dF
Boil for 90 minutes. Pitched yeast at 68 dF
