Yeast: Wyeast 1028 London Ale
Yeast Starter: 2 qt starter on spin plate (1 pint slurry)
Batch Size: 10 gallons
Original Gravity: 1.062
Final Gravity: 1.016
Alcohol Content: 6.04 %
Total Grains: 27 lbs US
Color: 16.6
Extract Efficiency: 68 %
Hop IBU's: 68.9
Boiling Time: 75 min
Primary Fermentation: 3 days @ 68 dF
Secondary Fermentation: 2 weeks @ 55 dF

Grain Bill:

20 lbs 3L Pauls pale malt - 74.1%
1.5 lbs 25L Victory malt - 5.6%
1.5 lbs 6L Munich malt - 5.6%
1 lb 3L Soft White Wheat - 3.7%
1 lb 2L Cara-Pils Dextrine - 3.7%
1 lb 40L Crystal malt - 3.7%
1 lb 220L Special-B - 3.7%

Hop Bill:

2 oz Yakima Magnum pellets (15% AA) @ 75 min
3 oz Cascade pellets (5.8% AA) @ 10 min
2 oz homegrown Cascade @ dry

Mash Schedule:

32 quarts strike water @ 165 dF
Single infusion @ 153 dF for 90 min

Brewers Notes:

Nice toasty flavor from the Victory and Munich with a rich malty finish from the B. Magnum hops kick ass and add a nice solid spicy base, while my perennial favorite Cascades give it the citrusy overtones. I've been tweaking this puppy for about 5 years and don't think I'll ever really stop. I would consider it my "house" beer. It's definitely a crowd pleaser any time of year.
