All grain recipe for 5 gallons

8# 6row pale malted barley
3/4# carapils
1.5 oz. Kent Goldings hop pellets (7.5 HBU) 180 minutes
1.5 oz. Hallertauer hop pellets (7.8 HBU) 180 minutes
1 oz. Hallertauer hop pellets 30 minutes
2/3 oz. Centennial whole hops 2 minutes
Wyeast London Ale yeast starter
2T gypsum
1 tsp. Irish moss (15 minutes before end of boil)
3/4 cup dextrose for bottling


Add 1T gypsum to mash water and 1T to sparge water. Step infusion
mash with the following rests:

15 minutes at 114 degrees Fahrenheit (dF)
20 minutes at 122 dF
20 minutes at 133 dF
20 minutes at 140 dF
45 minutes at 150 dF
30 minutes at 154 dF
Mash out at 170 dF

Boiled for three hours. Followed hop schedule above.
Pitched yeast at 68 dF

OG = 1.058
TG = 1.007
Abv = 7.0%
