Yeast: Rodenbach or WLP Belgian Ale
Yeast Starter:
Batch Size: 5 gallons
Original Gravity: 1.058
Final Gravity: 1.007

Total Grains: 9 lbs

Extract Efficiency: 75 %
Hop IBU's:
Boiling Time: 80
Primary Fermentation: 1 week at 70F
Secondary Fermentation: n/a

Grain Bill:

6.7lb Pale Malt
1.15lb flaked maize
1.15lb torr barley (crushed)
7.9oz crystal
3.6oz chocolate

Hop Bill:

.75oz whitbread goldings (bitter)
.50oz tettnang (flavor)
.45oz saaz (aroma)

Mash Schedule:

8 qts water,
153F for 60 minutes

sparge with 4 - 4.5 gallons at 170F

Brewers Notes:

boil 6.5 gallons 1 hour down to 5.5 gallons.
