Yeast: Wyeast 1056 American
Yeast Starter: 1 Pint
Batch Size: 5 gallons
Original Gravity: 1.048
Final Gravity: 1.012

Hop IBU's:
Boiling Time: 90 minutes
Primary Fermentation: 7 days 68 degrees
Secondary Fermentation: 14 days 65 degrees

Grain Bill:

8 lbs US 2 row Pale Malt
1 lb 40-50L Crystal Malt
1/2 lb roasted Crystal Malt
1/2 lb Carapils Malt

Hop Bill:

Cascade leaf (6.0 AA) 1.0 oz (60 Min)
Willamette leaf (4.5 AA) .5 oz (30 Min)
Willamette leaf (4.5 AA) .5 oz (15 Min)
Willamette leaf (4.5 AA) .5 oz (dry hop)

Mash Schedule:

Step mash
Added 2.5 gallons of 130 degree H2O to crushed grains, held at 122 for 30 min (stirring often to dough in)
Added 1.75 gallons of 212 water to grist, added heat until 150 temp was reached, held for 20 minutes.
Raised temp to 158, held for 20 more minutes (iodine test showed conversion was complete)
Sparged with 4 gallons of 170 H2O

Brewers Notes:

Came out with about 7 gallons of Wort....boiled down to about 6 1/4 gallons before adding boil hops. About 5 1/2 gallons went into the fermentor....transferred after 7 days...conditioned 14 days(dry hopped at 7 days in the secondary) and kegged.....very nice balanced American Pale Ale. A little more bitter then I'd thought, but I liked it.
