Boiling Time: 60 minutes
Primary Fermentation: 1 week @ ~68F
Secondary Fermentation: 1 week @~ 68F

Grain Bill:

10lbs 2 Row Pale Malt
1lbs Munich Malt
.25lbs Crystal 20L Malt
.25lbs Crystal 40L Malt
.5lbs Flaked Barley
.5lbs Victory Malt

Hop Bill:

1.25oz Perle pellets 7.3% for 60 mins
1.00oz Cascade Hop plugs 20 mins
1.00oz Cascade Hop Plugs 5 mins
0.50oz East Kent Goldings Hop Plugs 5% for 5 mins
1.50oz East Kent Goldings Hop Plugs 5% Steep for twenty mins before cooling.

Mash Schedule:

Single Infusion Mash in 13qts at 153-156F for 120 mins. Transfer to lauter tun and sparge with five gallons of 170-185F water. Recirc until clear.

Brewers Notes:

I may have added some gypsum too but you know your water and should adjust accordingly!
