Yeast: Wyeast American Ale
Yeast Starter: 1-qt starter
Batch Size: 5.5 US Gallons
Original Gravity: 1.052
Final Gravity: 1.012
Alcohol Content: 5 %
Total Grains: 10.5 lbs
Color: 12.8
Extract Efficiency: 70-75 %
Hop IBU's: 17
Boiling Time: 60 minutes
Primary Fermentation: 5 days at 68 degrees F
Secondary Fermentation: 7 days at 68 degrees F
Additional Fermentation: 5 Days at 33 degrees F

Grain Bill:

8 pounds American 2-row (highly modified)
1 pound CaraMunich I
1 Pound Crystal 20L
2 ounces Chocolate
3 ounces Special Roast
2 ounces Buscuit

Hop Bill:

1/2 oz Cluster 7.0 Alpha at 60 minutes
1/2 oz Saaz 4.0% at 30 minutes

Mash Schedule:

Infusion mash.

Mash in with 1/qt per LB grain (about 4 gallons) and hold at 155 degrees until conversion (about 45-60 minutes)

Batch Sparge with 4.5 gallons water at 175 degrees.

Forced carbonation of 5 gallons in keg
